Apple Granola Salad

I came up with this "salad" this morning, when I discovered that there wasn't any soymilk to go with the granola that I made yesterday. It was simple, but a really satisfying breakfast.

1 large apple grated (I used Granny Smith)

1 cup granola (I used homemade Vanilla Maple Granola)

1/2 cup dried fruit (I used raisins)

Mix and enjoy!

Sounds like a lovely mixture and I think you are right, pears would work too. Thanks for sharing. Hope you have a great week!

Robbin, Thanks for stopping by to see my recipe. I want to try pears now, maybe with dried cherries in place of raisins. Hope your week is wonderful as well!

Wow does that sound good. I know Joy will absolutely love this. Can you imagine how even yummier this would be with a little dollop of vanilla yogurt on top? Yum!

Grace, I had that same thought myself (though for me it would be soy yogurt.) It's a good thing, though, that I was out of yogurt, because if I had some on hand, I would have eaten the granola mixed into the yogurt and never thought to grate the apple. Thanks for the nice feedback! :)

This sounds great! I've got some locally made granola, apples, and raisins and will make this soon!

Nan, oh good! I hope it "hits the spot" as it did with me! :)

Hi! I'm just dropping by to let you know about a food blogging event I'm hosting, called "A Vegetarian Feast." The first round is thanksgiving themed, but broadly it can include any vegetarian dishes that use fall ingredients or make you think of Thanksgiving. If you're interested in participating or mentioning the event on your blog, you can find details here. Thanks!

Thanks so much! As something of a blogging "newbie," I really appreciate the help :-)

Judith, No problem at all! This is the less active of my two blogs and your event will give me something to do here for a little while! *grin*
