Apple Granola Salad


I came up with this "salad" this morning, when I discovered that there wasn't any soymilk to go with the granola that I made yesterday. It was simple, but a really satisfying breakfast.


1 large apple grated (I used Granny Smith)

1 cup granola (I used homemade Vanilla Maple Granola)

1/2 cup dried fruit (I used raisins)


Mix and enjoy!

Wow does that sound good. I know Joy will absolutely love this. Can you imagine how even yummier this would be with a little dollop of vanilla yogurt on top? Yum!

Grace, I had that same thought myself (though for me it would be soy yogurt.) It's a good thing, though, that I was out of yogurt, because if I had some on hand, I would have eaten the granola mixed into the yogurt and never thought to grate the apple. Thanks for the nice feedback! :)
